I had digestive problems/constipation with both animal rennet and vegetarian rennet cheeses, as well as both pasteurized/unpasteurized. It’s possible part of the reaction was to the saltiness of the cheeses too, though, as I’m still having troubles adding small amounts of salt to my diet. I plan on trying cheese again at some point, but not right now : P.
